Blue Nun Chicken Satay

Chicken satay has a flavor that’s savory, smoky, and lightly sweet, with a gentle spice that makes it comforting yet exciting. The chicken is marinated in a mix of herbs & spices, coconut milk, and aromatics, which gives it a rich depth—juicy, fragrant, and slightly charred from grilling. When paired with peanut sauce, the taste becomes creamy, nutty, and a little tangy, balancing the smokiness of the grilled chicken with a satisfying sweetness and mild heat.



Serves 2


Ingredients

  • 350g chicken thigh, or breast thinly sliced (5 - 7 mm thick)

  • 2 tsp Blue Nun Satay Marinade Powder (for marinating)

  • ¼ cup coconut milk

  • 2 tsp cooking oil

  • ½ tsp salt

  • bamboo skewers (soaked in water for 10 minutes before use)


*Satay skewers can be cooked in a variety of ways. Traditionally they are done on a BBQ grill, but in the absence of a grill you can pan sear, or for a drier result satay skewers can be oven baked or air fried.



Preparation

  1. Powder, ¼ coconut milk, ½ tsp salt, mix them together, place in the fridge to marinate for a minimum of 30 min.


  2. Skewer the marinated chicken slices.


  3. Preheat the air fryer to 325 F for 5 min., cook chicken skewers for 8 min. on one side. Flip the skewers and cook for an additional 9 minutes, or until golden brown and slightly charred on the edges. Ensure chicken is cooked through.


  4. Transfer the chicken skewers onto a serving plate. Serve with warm Blue Nun Satay Sauce on the side, along with cucumber relish.



Spice Variations & Additions

There’s no harm in being versatile with your Satay. You can always adjust the recipe to suit your taste preferences.

  • Spice level: if you enjoy spicier dishes, consider adding fresh chilies, chili powder or chili oil.



Pairing Suggestions

While Satay is a delight on its own, thoughtful pairings can elevate your meal:

  • Side dishes: a salad or Thai relish (ajaad - อาจาด) or mango cucumber relish can provide a refreshing counter balance to the richness of the dipping sauce.

  • Flatbreads: naan, roti or pita are ideal for scooping up the Satay Dipping Sauce, ensuring every last drop is savoured.
