Northern Grilled Chicken (Gai Yang Makhwean)
A Northern Thai-style grilled chicken seasoned with aromatic herbs and makhwean peppercorns (มะแขว่น) - a distinctive Northern Thai spice with a bright citrusy, peppery aroma. The chicken is marinated with garlic, cilantro roots, lemongrass, and traditional Thai seasonings, then grilled or roasted until juicy, tender, and lightly charred. Simple, rustic, and full of authentic Northern Thai flavor.
Serves 2
Ingredients
4 chicken legs
2 tbsp Blue Nun Makhwean Peppercorns
6 cloves garlic
3 tbsp cilantro roots or stems, roughly chopped
2 tbsp Blue Nun Freeze-Dried Lemongrass, optional
2 tbsp fish sauce or soy sauce
1 tsp salt
1 tbsp coconut sugar or brown sugar
Garnish - optional
Crispy fried red onion or caramelized red onion
Fresh cilantro
Sliced kaffir lime leaves or Thai basil
Preparation
1. Prepare the chicken
Pat the chicken legs dry. Make 3–4 shallow cuts into the thickest parts of the meat. This helps the marinade penetrate deeper and allows the chicken to cook more evenly.
2. Make the marinade
In a mortar and pestle or spice grinder, lightly crush the makhwean peppercorns. Add the garlic, cilantro roots or stems, and lemongrass. Pound or grind until you have a coarse aromatic paste. Add the fish sauce, salt, and coconut sugar. Mix well. Rub the marinade thoroughly over the chicken, making sure to work it into the cuts. Cover and refrigerate for at least 30–45 minutes. For deeper flavor, marinate for 4–12 hours.
3. Grill or roast
Oven: Preheat the oven to 450°F (230°C). Place the chicken on a rack over a baking tray and roast for about 15–20 minutes. Reduce the temperature to 375–400°F (190–200°C) and continue cooking until the chicken is tender and cooked through.
For extra char and smoky flavor, finish under the broiler for 2–3 minutes, watching carefully to prevent burning.
Air Fryer: Preheat the air fryer to 375°F (190°C). Arrange the chicken in a single layer and cook for approximately 20–25 minutes, turning halfway through. Cooking time will vary depending on the size of the chicken legs.
The chicken is ready when the thickest part reaches an internal temperature of 165°F (74°C).
Grill / BBQ: Preheat the grill to medium-high heat. Grill the chicken, turning frequently, until deeply browned and lightly charred on the outside and fully cooked inside.
4. Serve
Rest the chicken for 5 minutes before serving. Garnish with fresh cilantro and crispy or caramelized red onion.
Serve hot with Thai sticky rice, jasmine rice, roti, or steamed vegetables.
Spice Variations and Additions
Make it your own while keeping the Northern Thai character of the dish.
Spicier: Add fresh Thai chilies, dried chili flakes, or a small amount of chili powder to the marinade.
More citrusy: Add a little finely grated kaffir lime zest or a few kaffir lime leaves.
More aromatic: Increase the fresh lemongrass slightly
Extra savory: Use fish sauce for a more traditional Thai flavor; soy sauce can be used as an alternative.
Sweeter finish: Add a little extra coconut sugar or honey for deeper caramelization when grilling.
