Khao Soi (ข้าวซอย) is a curry noodle soup, with origins in Northern Thailand & Myanmar. This dish is distinct from Lao Khao Soi, served in Laos. The evolution of Northern Thai Khao Soi resulted from the influence of Chinese Muslim traders on local cuisine, at a time when Northern Thailand was part of the Burmese Empire.
Although Khao Soi curry is similar to Thai Yellow Curry, its broth is usually thinner, and the addition of ginger and black cardamom add a degree of complexity. It’s usually served with deep-fried, crispy egg noodles as a topping, pickled mustard greens, shallots, chili oil and fresh lime.
