Satay สะเต้ะ is not Thai in origin. This iconic peanut-based dipping sauce originated in Java, Indonesia, having been developed following the Portuguese introduction of peanuts to Southeast Asia in the 16th Century. From Java, satay spread throughout the Indonesian Archipelago, and as a result, a multitude of variations have emerged. By the late-19th century, satay had crossed the Strait of Malacca into neighbouring Malaysia, Singapore, and Thailand.
