Thailand’s Massaman curry or gaeng massaman (แกงมัสมั่น) is renowned for its rich & complex flavour. This iconic Southern Thai curry utilizes a wide variety of spices, in specific proportions, some of which are not typically used in traditional Thai cuisine.
Massaman Curry is a fusion of culinary traditions. Its origins are in deep southern Thailand, with strong Muslim / Malaysian influences. Ultimately, its history can be tied to Siam’s role in the trade route between India and China, which saw Thai maritime ports and those of the Strait of Malacca being frequented by Indian, Arab and Persian traders.
